On 23rd March 2010, Esposito of Carlton launched the 2006 Redesdale Estate Cabernet Sauvignon/Cabernet Franc to diners at a special sold-out Degustation Seafood and Wine Dinner.
Sommelier James Bone reported that at first pour, the wine showed restraint and poise, as young cabernet often can. But after a few minutes in the glass, the 06 Cabernet Sauvignon/Cabernet Franc, really started to show some excellent primary red fruit character. Hints of blood plum, cassis and cranberry were slow to reveal themselves, the result, an eventual rewarding experience for the drinker.
He noted that while the tannins are still a little firm, the acid shows all the signs of a wine that will age well for 10 - 15 years. Teamed with carpaccio of portabello mushroom topped with goat’s curd from Esposito, James said it was a match made in heaven.
With less than 500 cases produced, the early bird will most certainly get the wine. So visit The Redesdale during April and try our Wine of the Month.
