Sommelier James Bone's Wine of the Month - Whistling Eagle Sangiovese 2007

Ian and Lynn Rathjen of Whistling Eagle are fourth generation farmers/wine growers with a vineyard that sits at the very site of the first known vineyard in the Heathcote region. Ian’s great grandfather, Henning Rathjen planted his first vines during the 1860’s, the same time The Redesdale was being built. While the vines have been replaced – Whistling Eagle sits in an iconic Australian wine region.

This month, Sommelier James Bone has listed the Whistling Eagle 2007 Sangiovese. Made in tiny quantities, (50 cases only), this wine demonstrates a shift in style from the typical shiraz we all love from the region. The Sangiovese demonstrates a wonderful ripe cherry bouquet with savoury notes. On the palate there is a perfect balance of fruit, flavour and acid - giving the wine a perfect structure. It isn’t Chianti, it is Heathcote Sangiovese and matched extremely well with chef’s Leitchville Pork cutlet.
